There’s a moment behind the bar — when the right ingredients meet the right technique — that feels less like cooking and more like alchemy. That’s where I fell in love with this craft. Not with the glamour of it, but with the science. The way balance, temperature, and timing can transform simple ingredients into something that stops a room.
My name is Hernan Trujillo III. I’ve spent 13 years behind some of New York’s most iconic bars — the Polo Bar, the New York Playboy Club, a Midtown speakeasy I helped design from the ground up — learning not just how to make great drinks, but how to read a room, build a program, and make every guest feel like the night was made for them.
